
Zucchini Mandolino
This is a wonderful and very quick way to
prepare a side dish using zucchini and
tomatoes which are so plentiful right now.
It can be ready to eat - start to finish - in
less than 10 minutes. Do not overcook the
zucchini or it will disintegrate. This amount
will serve two or three.
Ingredients
1 large zucchini
2 Italian Plum tomatoes
2 cloves garlic
2 Tablespoons margarine
Salt and white pepper to taste
Preparation
* Wash and peel zucchini and then shred into
fine thin spaghetti-like strips. This can be
done using the side of a box grater that has
small round holes about the size of a pencil
eraser. Or you could use an Italian mandolin
which is why I call this recipe Zucchini
Mandolino.
* Chop 2 Italian plum tomatoes into small
dice size pieces. Do not remove skin or seeds
unless you cannot eat them due to medical
reasons.
* Slice two cloves of garlic thinly and then
saute in 2 Tablespoons margarine in a non-
stick pan.
* Stir in shredded zucchini strings and diced
tomatoes. Season with salt and whit pepper.
Continue cooking for 3-4 minutes until the
zucchini is heated through.
