Before I will tell you about the fettuccine Boscaiola,
let me tell you something about the goddess DIANA.
During the Ancient times in Rome she was the Goddess of the hunt and of the forest.
In Roman art Diana usually appears as a huntress with bow and arrow, along with a hunting dog or a stag. One day of long, but very long time ago I made this Fettuccine in her honor. she enjoyed them so much maybe because the taste of this fettuccine reminded her the flavor of the forest, that Since that day I called this recipe with her name! Fettuccine alla Diana
These are the ingredients for 3 person:
500 gr (1 lb) of Fettuccine
100 gr of Wild Mushrooms
200 gr. of Peas
1 onion and 2 gloves of garlic
60 gr (2 oz) of Butter
1/2 glass of white wine
A pinch of Nutmeg
Salt and Pepper
A bunch of fresh parsley
1 cup of Freshly Grated Parmesan
50 gr of Chopped Bacon
Half Cup of half/half
Make sate a chopped onion in a sauce pan with some butter and the chopped bacon.
Then add and peas, a spoon of water and cover, cooking all over medium / low heat.
After around 5 minutes add the mushrooms chopped in little stripes and the white wine.
Cook till the wine will be rinsed. Add some salt and pepper and the half cup of half and half or cooking cream.
At this point start to cook the Fettuccine, when they are "al Dente", pour them in the saucepan with the mushroom sauce and add Grated Parmesan and a little bit of butter.
Before you serve say with high voice: "Oh Diana, in your honor I am going to eat this fettuccine!" Don't forget to add a chair in your table, maybe she will appear to join the lunch!
