
Soup can be very comforting and right now we all need a whole lot of comfort.
This recipe fills the bill nicely. At the price of garlic, you may need to float a loan to make this as it requires 36 cloves. Well worth the expense however as it is wonderful. You get your moneyıs worth just smelling it.
Ingredients
6 Tablespoons butter or margarine, melted
2 cups onion, chopped
36 cloves garlic, chopped (1/2 cup)
1/2 cup all-purpose flour
6 cups beef broth
1 cup dry vermouth
1/2 coup sour cream
Chopped fresh chives
Preparation
*Melt 6 Tablespoons butter or margarine in a saucepan.
Add 2 cups chopped onion and 1/2 cup chopped garlic. Cook until onion is soft, about 10 minutes.
Add 1/2 cup flour and stir 5 minutes.
Whisk in 6 cups beef broth a little at a time.
Add 1 cup vermouth and simmer 25 minutes.
Puree soup in blender. Return to saucepan over low heat.
Whisk in 1/2 cup sour cream, a little at a time. Do not boil.
Garnish with chopped chives.
Makes 4 cups.
