Here another free Italian recipe of Pasta...
Maybe not everybody knows, but this recipe is a famous dish from a little village in Italy: Amatrice, a town on the border between Lazio and Abruzzi about 80 miles northeast of Rome.
On the Sunday after Ferragosto, August 15, Bucatini all'Amatriciana is served with great fanfare at local celebrations.
Let's start with this simple but delicious recipe!
Brown in a frying pan 100 gr/ 4oz. diced bacon (guanciale) in olive oil with a few red chili peppers.
Pour in and
evaporate half a glass of white wine...
Then remove the bacon and set it apart in a warm place...
Add 500 gr/ 1lb. chopped tomatoes (can tomatoes are fine and easy to use) and cook for 15 minutes.
At this point put back the guanciale in the sauce...
Pour the sauce over 350
gr/ 12 oz. freshly cooked
bucatini, mix well and serve with grated pecorino cheese as desired.
